I’ve realized I bake the same kind of cake over and over in winter — something simple, not too sweet, meant to sit on the counter and get sliced whenever I walk past.
I don’t want frosting or layers this time of year. I want olive oil, citrus, and a crumb that holds for days. The kind of cake you eat with coffee, standing in the kitchen.
