Blackened Cajun Chicken Thighs (skinless, bone in) with Seasoned Roasted Potatoes garnished with a side salad. I marinated the chicken over night with cajun rub and olive oil. I seared them in clarified butter and then finished in the oven. I parboiled the potatoes and roasted them along with the chicken thighs and seasoned them with a garden herb seasoning blend. This corn salad is filled with sweet corn kernels, avocado, tomato, jalapeno and red onion, all tossed in a zesty cilantro lime dressing. An easy and colorful side dish that pairs well with chicken, beef and seafood.
