The makers of Mk 1 had a golden opportunity to add something interesting to Sektors character when changing them from a man to a woman, something that would have added More to The previous timeline versions of them too. (Like Adding More depth to their choise to go trough cyberization)
Option 1: Sektor is transfem, something that was denied of them in The previous timelines but now they get to embrace it.
Option 2: Sektor is assigned female at birth but was then forced into a male identity in The previous timelines, something that wouldn't have happened in The new timeline.
(both options could have easily Been implied trough Liu Kang and Geras in vs dialogs against Sektor)
