Food waste is a huge problem in our country, so I am writing to ask that you support the Food Date Labeling Act (H.R. 3159 and S. 1484). This bill would clear up confusion about “best-used-by” and other labels by establishing requirements for quality and discard dates in food packaging. Currently, there is no federal regulation for date labels. This means that consumers, confused by different types of labels, end up discarding edible food. Food waste results in households wasting money and exacerbates climate change. Food waste is responsible for about 6% of total US GHG emissions. The nonprofit ReFED found that reducing food waste could generate $73 billion in financial benefit, recover the equivalent of 4 billion meals for food insecure individuals, save 4 trillion gallons of water, and avoid 75 million tons of greenhouse gas emissions annually in the US. TEST KITCHEN: AUBERGINE
I've got last aubergines of the season from a farmer's market two weeks ago. Since they're refrigerator free from the field to the market, I made an experiment to show the different changes of aubergines depending on preservation methods.
I kept the white one in the vegetable drawer of the fridge, the purple one on the kitchen shelf out of the fridge. For the lined one, I waxed its stem and kept it on the kitchen shelf out of the fridge.
For about a week, there was not much change in any of them. Now it's two weeks passed, I see that the aubergines outside the fridge got dry a bit and the one in the fridge got mushy with a spot rotten. You see the different reactions of aubergine in different surroundings? Don't forget they are alive!
So then which one is the winner? I vote for the one with waxed stem out of the fridge. When I cut them, I could see the refrigerated one got rotten inside and became powdery while the other ones got just a bit dry. The waxed stem one got less dry. Yes, waxing the stem keeps the aubergine from dehydrating as I showed on the post how to preserve melons
Save Food, Save Money
When students start to save their money. We mostly spend less on our meals, and we hardly never get the chance to eat whether we're in a hurry or too tired to spend anything at all. This can lead us, students, to lose our concentration in class, and often get headaches. Some might faint due to the lack of food they eat and caused health issues on the line.
So, when you happen to have a leftover on your meal, be sure you'll preserve it just in case when you felt hungry or crave for something to eat, then you won't have a problem with spending your money or wasting your food at the same time. Food preservation also ensures that this packaged food remains edible and safe for consumption, preservatives are added to it. In general, natural food preservatives are therefore considered safer for consumption.
Here some common, quick and easy food preservation methods:
Drying
Drying is a food preserving method that has the advantage of retaining all the nutrients of the food product and reducing the weight of the food product substantially. And of course, the important nutrients that are lost in this particular method are thiamin and vitamin C.
Freezing
Freezing works by keeping the foods in extremely low temperatures thus preventing the growth of any kind of microorganisms in the foods. Like using a refrigerator for preserving your food.
Canning
Canning can be done by sealing the edible food items in sterile cans and jars then boiling it after to kill any of the remaining menace-making microorganisms. But even with a little lack of attention, this process can lead to easy and fast contamination of canned food products.
Smoking
Smoking is a method most commonly suitable for fish and meat products with the technique of heat that dehydrates the food product and the hydrocarbons absorbed.
