Ingredients: 2 cups cooked shredded chicken. 1 cup frozen mixed vegetables, thawed. 1/2 cup chicken broth. 1/4 cup heavy cream. 1 tablespoon all-purpose flour. 1 tablespoon butter. Salt and pepper to taste. 4 slices bread of choice. 4 slices cheddar cheese.
Instructions: In a saucepan, melt butter over medium heat. Stir in flour to create a roux, cook for 1-2 minutes. Gradually whisk in chicken broth until smooth. Add heavy cream, shredded chicken, and mixed vegetables. Cook until heated through and sauce thickens, about 5 minutes. Season with salt and pepper to taste. Toast bread slices until golden brown.
