Saffron Risotto Milanese. I enjoyed this dish in Milan. Not my favorite risotto in Italy (this one taste just like Mac N Cheese!!). Why did I make this dish? @nutrition_facts_org and How Not To Die Book discusses the medicinal properties of Saffron. It has been shown in a double-blind trial “to help diminish the symptoms of Alzheimer’s Disease” and “saffron appeared to be just as effective at treating Alzheimer’s symptoms as the leading drug (which isn’t saying much, but at least the people didn’t experience nausea, vomiting and diarrhea-Side effects of the drug). Saffron has also “gone head to head” with Prozac for clinical depression - saffron worked just as well - without the side effects, such as sexual dysfunction. Since saffron is THE most expensive spice on the planet “Just smelling it appeared to have psychological benefits.” I boosted the nutritional value by adding nutritional yeast and mashed chickpeas. 🇬🇧 Our creamy vegan saffron risotto - similar to risotto alla Milanese - has all the taste of the original Italian recipe, but without butter, without cheese, and with little oil. We still get a creamy and tasty risotto thanks to the way we toast the rice, thanks to a good base broth, and to an excellent "mantecare". 🇮🇹 Il nostro risotto allo zafferano - simile al risotto alla milanese - ha tutto il gusto della ricetta originale non vegana, ma è senza burro, senza formaggio e con poco olio.
