🎶 Whoa, Blackberry (Bam-ba-lam), Whoa, Blackberry (Bam-ba-lam), Blackberry made a pie (Bam-ba-lam), The damn thing gone wild (Bam-ba-lam)! 🖤 Blackberry Crisp Cheesecake Pie with Lemon Snap Cookie Crust 🥧 I have been waiting all summer to make this! After getting inspired by the healthy Blackberry Crisp recipe from @healthecooks, I wanted to develop my own rendition and incorporate it into an ultimate summer dessert. A favorite ingredient I like to use for my tart or pie crusts are cookies from @sweetzelscookies. For this beauty, I used their Lemon Snaps that have a light citrus essence and a delightful crunch. And for the base layer, I made my signature ricotta cheesecake flavored with fresh lemon juice and lemon zest. The finishing touches were a layer of sweet and juicy sugared blackberries and a cinnamon sugar oatmeal streusel topping.
