Ingredients: 1 prime rib roast 8-10 pounds. 1/4 cup olive oil. 4 cloves garlic, minced. 2 tablespoons fresh rosemary, chopped. 2 tablespoons fresh thyme, chopped. Salt and pepper to taste. Wood chips for smoking.
Instructions: Preheat smoker to 225F 107C. In a small bowl, mix olive oil, minced garlic, chopped rosemary, chopped thyme, salt, and pepper to create a rub. Pat the prime rib roast dry with paper towels and rub the herb mixture all over the roast. Place wood chips in the smoker box or directly on the coals for added smoke flavor. Place the prime rib roast on the smoker grates and smoke at 225F for about 3-4 hours or until the internal temperature reaches your desired doneness 135F for medium-rare. Remove the roast from the smoker and let it rest for 15-20 minutes before slicing. Slice and serve the smoked prime rib roast with your favorite sides.
