been packing up these super green 🌿🌱egg white cups I baked for a quick protein boost. clean + simple . . .
• 6 egg whites + 6 whole eggs beaten • sea salt • cracked black pepper • red pepper flakes • 2 cups chopped spinach • 4-5 white mushrooms chopped • 3/4 cup chopped steamed broccoli (I used @traderjoeslist frozen florets)
what to do:
• grease a 12-muffin baking tin with coconut oil • add chopped spinach • layer in chopped mushrooms • finish with defrosted {or steamed if using fresh} broccoli • beat eggs + whites, season with spices • evenly distribute egg mixture by pouring into muffin tin
bake at 350 degrees for 12-16 minutes. let cool, scoop out of tin and enjoy right away or refrigerate for an easy on-the-go breakfast option.
each serving, which is 2 egg cups, is ~150 calories, can’t beat that!
