Ingredients: 1 cup raw almonds. 1 cup medjool dates, pitted. 1/4 cup raw cacao powder. 1 tablespoon orange zest. 1/2 teaspoon pure vanilla extract. Pinch of sea salt. 1/2 cup vegan chocolate chips. 1 teaspoon coconut oil.
Instructions: In a food processor, blend the almonds until finely ground. Add the dates, cacao powder, orange zest, vanilla extract, and sea salt. Blend until the mixture sticks together. Form small balls from the mixture and place them on a baking sheet lined with parchment paper. Freeze the balls for about 30 minutes. In a microwave-safe bowl, melt the chocolate chips and coconut oil together in 30-second intervals, stirring in between, until smooth. Dip each frozen ball into the melted chocolate, coating evenly. Place the coated balls back on the parchment paper and freeze for another 10-15 minutes until the chocolate sets. Store in an airtight container in the fridge for up to a week.
