Ingredients: 1 cup roasted pumpkin seeds. 1 can 15 oz chickpeas, drained and rinsed. 3 cloves garlic, minced. 1/4 cup fresh lemon juice. 1/4 cup tahini. 2 tablespoons olive oil. 1/2 teaspoon ground cumin. 1/2 teaspoon paprika. Salt and pepper to taste. 2-3 tablespoons water for consistency. Fresh parsley and extra roasted pumpkin seeds for garnish.
Instructions: In a food processor, combine the roasted pumpkin seeds, chickpeas, minced garlic, fresh lemon juice, tahini, olive oil, ground cumin, paprika, salt, and pepper. Blend until the mixture is coarse and well combined. With the food processor running, slowly drizzle in the water until you reach your desired consistency. You may need more or less water, so adjust accordingly. Taste the hummus and adjust the seasoning with more salt, pepper, or lemon juice if needed. Transfer the roasted pumpkin seed hummus to a serving bowl and garnish with fresh parsley and extra roasted pumpkin seeds. Serve with pita bread, fresh vegetables, or crackers. Enjoy!
