I like to believe Toph had some hand in helping to develop the official sport of pro-bending. It's like a less-underground and more structured version of her underground tournament fighting ring days.

I'm not an expert in game theory but I really like the rules and stipulations laid out in pro-bending matches. They make sense and feel like a real sport. There are a lot of fictional games in series that have such dumb rules or such ridiculous win conditions that it completely breaks even my immersion, but the pro-bending matches and calls feel believable enough to me as a layperson. And it made the comradery between Korra and Mako and Bolin more believable and compelling where I otherwise wouldn't have been very interested in them as a trio at all.
I wonder how the rules will be altered in response to the Airbenders that have expressed an interest in going into pro-bending in the canon now.

My head-canon: Toph was instrumental in the development of pro bending. Many of the penalties are based on things she did.
