These delightful mashed potato puffs are a perfect appetizer or side dish. They are packed with flavor from cheddar cheese, bacon, and green onions, and they bake up into adorable little puffs that are crispy on the outside and creamy on the inside.
Ingredients: 2 cups mashed potatoes. 1 cup shredded cheddar cheese. 1/4 cup chopped green onions. 1/4 cup cooked and crumbled bacon. 1/4 cup sour cream. 1/4 cup grated Parmesan cheese. 1/2 teaspoon garlic powder. 1/4 teaspoon black pepper. 1/4 teaspoon salt. 2 large eggs, beaten.
Instructions: Get the oven ready by heating it up to 400F 200C. Get a mini muffin tin greased. Put mashed potatoes, cheddar cheese, green onions, bacon, sour cream, Parmesan cheese, garlic powder, black pepper, salt, and beaten eggs in a bowl. Mix everything together well. Fill each mini muffin tin cup all the way to the top with the batter. After the oven is hot, bake for 20 to 25 minutes, or until golden brown and puffed. Take the muffin tin out of the oven and let the potato puffs cool for a few minutes. Then carefully take them out of the tin. Enjoy while still warm!
