Mexican Wedding Cookies
Ingredients (makes about 18 cookies)
2 Cups All Purpose Flour
1 Cup Almond Flour
¾ tsp Salt
½ tsp Ground Cinnamon
1 Cup Unsalted Butter (room temp)
⅔ Cups Granulated Sugar
2 tsp Vanilla Extract
1 Large Egg
Powdered Sugar (for Coating)
Cream the room temp butter with the sugar until incorporated.
Add the Egg and mix until fully incorporated .
Add vanilla extract and mix well.
In a separate bowl, sift All Purpose Flour and Almond Flour and mix with the salt and Ground Cinnamon
Add the dry ingredients slowly until the dough forms (in about 3 parts).
Once mixed together, wrap the dough in plastic wrap and refrigerate for at least 1 hour.
After the dough has rested, preheat the oven to 350 and portion dough into 1 to 1 ¼ oz balls.
Place on a greased up pan/sprayed sheet pan about 1 inch apart.
Bake for about 15 to 18 minutes, until slightly brown.
Toss gently in powdered sugar while still hot then set aside to cool.
