A tasty Black Bean Burger that is vegan-friendly and comes with crunchy Plantain Chips. The savory flavors of the burger and the sweet and savory crunch of the plantain chips come together in this recipe to make a filling meal.
Ingredients: 1 can 15 oz black beans, drained and rinsed. 1/2 cup breadcrumbs. 1/4 cup finely chopped onion. 1/4 cup chopped cilantro. 2 cloves garlic, minced. 1 tsp cumin. 1/2 tsp chili powder. Salt and pepper to taste. 4 burger buns. 1 ripe plantain. 2 tbsp vegetable oil. Lettuce, tomato, and avocado slices for topping. Your favorite burger condiments e.g., ketchup, mayo, mustard.
Instructions: In a large bowl, mash the black beans with a fork or potato masher. Add breadcrumbs, chopped onion, cilantro, minced garlic, cumin, chili powder, salt, and pepper to the mashed beans. Mix until well combined. Divide the mixture into 4 portions and shape them into burger patties. Heat a grill or a skillet over medium-high heat. Cook the black bean burger patties for about 5 minutes per side, or until they're heated through and have grill marks. While the burgers are cooking, slice the ripe plantain into thin rounds. In a separate skillet, heat the vegetable oil over medium heat. Fry the plantain slices until they are golden and crispy, about 2-3 minutes per side. Remove from the skillet and drain on paper towels. Assemble your burgers by placing a black bean patty on each bun, top with lettuce, tomato, and avocado slices, and your favorite condiments. Ingredients: 2 green plantains. 2 tablespoons coconut oil. Salt to taste. 2 ripe avocados. 1 small red onion, finely diced. 1 tomato, diced. 1 jalapeo pepper, seeded and finely chopped. Juice of 1 lime. 2 tablespoons fresh cilantro, chopped. Salt and pepper to taste.
Instructions: Set oven temperature to 375F 190C. Using a sharp knife or mandoline slicer, peel and thinly slice the plantains. Coat the plantain slices thoroughly in coconut oil by tossing them in a bowl. Place the plantain slices on a baking sheet covered with parchment paper so that they are in a single layer. Season the plantain slices with salt. Bake, rotating halfway through, in a preheated oven for 15 to 20 minutes, or until golden brown and crispy. Make the guacamole while the plantain chips are baking. Using a fork, mash the avocados until smooth in a medium-sized bowl. To the mashed avocado, add diced red onion, diced tomato, chopped jalapeo, lime juice, and cilantro. Add salt and pepper for seasoning, then stir until thoroughly mixed. After cooking, take the plantain chips out of the oven and allow them to cool slightly. Present the guacamole alongside the plantain chips. Have fun!

Ingredients: 1 can 15 ounces black beans, drained and rinsed. 1/2 cup breadcrumbs. 1/4 cup finely chopped red onion. 2 cloves garlic, minced. 1 tablespoon ground flaxseed. 1 tablespoon water. 1 teaspoon smoked paprika. 1/2 teaspoon ground cumin. Salt and pepper to taste. 2 ripe avocados. 1 lime, juiced. 2 tablespoons chopped cilantro. Salt to taste. Plantain chips, for serving.
Instructions: Use a fork or potato masher to mash the black beans in a bowl until they are mostly smooth. Salt and pepper the food and mix in the ground flaxseed, water, smoked paprika, cumin, and breadcrumbs. Mix everything together well. Split the mixture in half and use your hands to make a patty out of each half. Set the skillet on medium heat and add a little oil to it. For four to five minutes on each side, or until golden brown and hot all the way through, flip the patties over. In the meantime, mash the avocados in a bowl to make the guacamole. Add salt, chopped cilantro, and lime juice and mix well. You can put the black bean burgers on buns and serve them with plantain chips and guacamole on the side.
