With lots of quinoa and colorful vegetables, these Quinoa Pizza Bites are a better choice than regular pizza bites. They're great as a quick snack or as an appetizer at a party.
Ingredients: 1 cup quinoa, cooked. 1/2 cup shredded mozzarella cheese. 1/4 cup grated Parmesan cheese. 1/2 cup tomato sauce. 1/4 cup finely chopped bell peppers. 1/4 cup sliced black olives. 1/4 cup diced cherry tomatoes. 1 teaspoon dried oregano. 1/2 teaspoon garlic powder. Salt and pepper to taste. Fresh basil leaves for garnish.
Instructions: Preheat oven to 375F 190C. In a large bowl, combine cooked quinoa, mozzarella cheese, Parmesan cheese, and mix well. Add tomato sauce, bell peppers, black olives, cherry tomatoes, dried oregano, garlic powder, salt, and pepper. Mix until everything is evenly combined. Grease a mini muffin tin and spoon the quinoa mixture into each cup, pressing down gently to pack the mixture. Bake in the preheated oven for 15-20 minutes or until the edges are golden brown. Remove from the oven and let the quinoa pizza bites cool for a few minutes before carefully removing them from the muffin tin. Garnish with fresh basil leaves and serve warm.
