Ingredients: 1 pre-made vegan pizza dough. 2 medium potatoes, thinly sliced. 1/2 cup vegan mascarpone cheese. 8-10 fresh sage leaves. 2 cloves garlic, minced. 2 tablespoons olive oil. Salt and pepper to taste. Optional: vegan parmesan cheese for topping.
Instructions: Preheat your oven to 425F 220C. Roll out the pizza dough on a floured surface to your desired thickness. In a small bowl, mix together minced garlic and olive oil. Brush the garlic-infused olive oil over the rolled-out pizza dough. Arrange the thinly sliced potatoes evenly over the dough, leaving a small border around the edges. Dollop the vegan mascarpone cheese over the potatoes. Sprinkle fresh sage leaves evenly over the pizza. Season with salt and pepper to taste. Optional: Sprinkle vegan parmesan cheese over the top for extra flavor. Transfer the pizza to a baking sheet or pizza stone.
