I've been doing a fair bit of cooking recently - LOTS of muffins. At the moment my faves are there pineapple muffins.
I asked my sis what sort of muffins she wanted, and she said pineapple. So spent a looooooot of time going through the internet, looking at pineapple muffin/cupcake recipes. And this is the one that seemed the most like what I wanted to eat.
These pineapple cupcakes can be made in less than 30 minutes! They're made with crushed pineapple and topped with an easy pineapple frosting
It makes 10-11 muffins rather than a dozen (or 20-24 minis), and it comes together so quickly. I've started doubling the recipe and just putting the whole tin of pineapple in, as there's not a lot else I do with crushed pineapple.
ANYWAY these are sweet, soft, and great as a snack. I don't make the icing. I am sure they would be delicious with it, but they honestly don't need it. They're really nice this way.

A nice, healthy muffin in the morning is a small thing that helps me start my day out well. After the success of the apple and cranberry muffins last week, I decided to experiment a little more. I followed a basic muffin recipe and substituted some ingredients, such as sugar for agave nectar. I also had some strawberries on their last legs, so I popped them on top and they matched the pineapple beautifully. Makes 9. Ingredients: 1 3/4 cups plain flour 2 teaspoons baking powder 2 tablespoons agave nectar 1/2 teaspoon ground cinnamon 1 1/4 cups desiccated coconut 50g unsalted butter, melted 3/4 cup milk 2 eggs (free range if possible) approximately 250g fresh pineapple, diced
Directions: Preheat oven to 180c. Sift the flour, baking powder and a pinch of salt into a bowl. Add cinnamon and coconut and stir to combine. Make a well in the centre and add the agave, melted butter, milk and eggs. Mix until just combined, then fold pineapple through. Line a 12-hole muffin tin with 9 patty cases, then spoon the mixture into the holes. Bake for 25-30 minutes, or until golden. Serve warm with a cup of Padre Daddy's Girl blend coffee.
