Ingredients: 8 slices of whole grain bread. 8 ounces smoked salmon. 1 cup fresh parsley leaves, packed. 1/4 cup grated Parmesan cheese. 1/4 cup pine nuts. 2 cloves garlic, minced. 1/4 cup olive oil. Salt and pepper to taste. Lemon wedges, for serving.
Instructions: Toast the slices of whole grain bread until golden brown. In a food processor, combine parsley, Parmesan cheese, pine nuts, garlic, and olive oil. Pulse until smooth. Season with salt and pepper to taste. Spread the parsley pesto generously on each slice of toasted bread. Top 4 slices of bread with smoked salmon, dividing it evenly. Place the remaining 4 slices of bread on top to form sandwiches. Cut each sandwich in half diagonally and serve with lemon wedges on the side.
