These vegan mini pecan pies are a delightful treat, perfect for any occasion. The combination of crunchy pecans and sweet maple syrup filling encased in a flaky crust will surely satisfy your sweet tooth.
Ingredients: 1 cup pecans, chopped. 1/2 cup maple syrup. 1/4 cup coconut sugar. 2 tablespoons melted coconut oil. 1 tablespoon ground flaxseed mixed with 3 tablespoons water. 1 teaspoon vanilla extract. Pinch of salt. 1 vegan pie crust, homemade or store-bought.
Instructions: Preheat the oven to 350F 175C. In a bowl, mix together chopped pecans, maple syrup, coconut sugar, melted coconut oil, flaxseed mixture, vanilla extract, and salt until well combined. Roll out the vegan pie crust and cut it into small circles to fit your mini muffin tin. Press the circles of pie crust into each mini muffin cup. Fill each mini pie crust with the pecan mixture. Bake in the preheated oven for 20-25 minutes, or until the crust is golden brown and the filling is set. Allow the mini pecan pies to cool completely before serving.
