This Keto-friendly twist on quesadillas combines the sweetness of pears with the creaminess of Brie cheese, all wrapped up in a low-carb tortilla.
Ingredients: 2 low-carb tortillas. 1 ripe pear, thinly sliced. 2 oz Brie cheese, thinly sliced. 1 tbsp butter or ghee.
Instructions: Place the pan on medium heat. On one side of each tortilla, put butter or ghee. Put one tortilla in the pan with the buttery side facing down. Spread out the slices of Brie cheese on top of the tortilla. Put slices of pears on top of the cheese. Place the second tortilla on top, butter side up. Let it cook for two to three minutes, or until the bottom tortilla turns golden brown. It will take another two to three minutes of cooking until the cheese melts and the second side is golden brown after you carefully flip it over. Take it out of the pan and let it cool for one minute before cutting it into wedges. Enjoy while still warm!
