The flaky pastry and savory-sweet filling in these vegan sweet potato puff pastries make them a treat. Ideal for events, parties, or a tasty snack!
Ingredients: 3 medium sweet potatoes, peeled and diced. 1 tablespoon olive oil. 1/2 teaspoon salt. 1/4 teaspoon black pepper. 1/4 teaspoon ground cinnamon. 1/4 teaspoon ground nutmeg. 1/4 teaspoon ground ginger. 1 sheet vegan puff pastry, thawed. Flour for dusting. 1 tablespoon maple syrup optional, for glaze.
Instructions: Turn on the oven and heat it up to 400F 200C. Put the sweet potatoes in a large bowl and add the olive oil, salt, pepper, cinnamon, nutmeg, and ginger. Toss the potatoes so that they are evenly covered. Place the seasoned sweet potatoes on a baking sheet that has been lined with parchment paper. Roast for twenty to twenty-five minutes, or until the potatoes are soft. Take it out of the oven and let it cool down a bit. Bring the oven temperature down to 190C 375F. Put some flour on a surface and roll out the puff pastry into a rectangle that is about 1/4 inch thick. Cut into squares that are 2 inches across. Put some roasted sweet potatoes on top of each square of puff pastry. Then, fold the pastry over to make a triangle. Use a fork to press the edges together to seal. Place the filled pastries on a baking sheet that has been lined with parchment paper, making sure there is some space between each one. If you want, you can use maple syrup as a glaze on top of the pastries. The dough should be golden brown and crispy after 15 to 20 minutes in the oven. Take it out of the oven and let it cool down a bit before you serve it. Have fun with these tasty vegan sweet potato puff pastries!
