Ingredients: 1/2 cup popcorn kernels. 1/2 cup unsalted butter. 1 cup brown sugar. 1/4 cup light corn syrup. 1/2 teaspoon salt. 1/4 teaspoon baking soda. 1/2 teaspoon vanilla extract. 1 cup white chocolate chips. Sea salt, for sprinkling.
Instructions: Preheat oven to 250F 120C. Pop popcorn kernels using preferred method and set aside in a large mixing bowl. In a saucepan over medium heat, melt butter, then stir in brown sugar, corn syrup, and salt. Cook, stirring occasionally, until mixture reaches 250F 121C on a candy thermometer. Remove from heat and quickly stir in baking soda and vanilla extract. Pour caramel mixture over the popcorn and toss until evenly coated. Spread popcorn onto a baking sheet lined with parchment paper and bake for 45 minutes, stirring every 15 minutes. Remove from oven and let cool slightly. Melt white chocolate chips in a microwave-safe bowl in 30-second intervals, stirring until smooth. Drizzle melted white chocolate over the popcorn and sprinkle with sea salt. Allow the chocolate to set before serving. Enjoy!
