Simple pantry items are used to make this creamy and comforting potato casserole. The setting is perfect for a cozy dinner or a potluck.
Ingredients: 4 large potatoes, peeled and sliced thinly. 1 onion, thinly sliced. 1 cup shredded cheddar cheese. 1 cup sour cream. 1/4 cup butter, melted. Salt and pepper to taste.
Instructions: Before you start cooking, heat the oven to 375F 190C. Place some sliced potatoes and onions in a baking dish that has been greased. Add half of the cheese shreds to the potatoes and onions. Add more layers with the rest of the cheese, onions, and potatoes. Salt and pepper should be mixed together in a bowl with sour cream. Spread the sour cream mixture out evenly over the potato layers as you pour it on. Place the dish in the oven and cover it with foil. Bake for 45 minutes. Take off the foil and bake for another 15 minutes, or until the potatoes are soft and the top is golden brown. Before you serve it, let it cool down for a while. Have fun!

Buffalo Chicken Dip From the Woods Man. What a friend! I got a text⌠Whaaaaaat?!? Did I mention I am in the *city?* I have been craving spicy buffalo chicken, why not make buffalo chicken of the woods dip? Buffalo Chicken Dip from the Woods: Buffalo chicken is usually chicken + certain spices + ranch dressing (or blue cheese) + more cheesy, creamy things + heat. Instead of âadd some bottled ranch dressingâ to something, I always just add the ingredients I would use to MAKE the dressing to the dish, as I make the food, it tastes better than filled-with-preservatives bottled stuff! Saute until everything is well cooked: minced onions, garlic, sliced chicken of the woods. Turn off the heat. Mix in dollops of sour cream (vegan for alpha-gal), Dukeâs, chili powder, paprika, dill (for the ranch part), black pepper, onion and garlic powder if you want but I usually donât since I have the real thing already in the pan, sea salt, favorite hot sauces (today, lots of chili garlic!), a little mustard, a drizzle of lime, a dash of coriander. Mix it alllllllllllllll up. Let it chill and serve, but heck, who are we kidding, I didnât wait and spooned that out warm, serving it with raw zucchini. The next day, I served it to my friend as an app on toast, along with another app of rose jam with cream âcheeseâ on bread. When I wasnât having fun, I spent the past few weeks knee-deep in zoning. I really missed my calling. While I love architecture, web development, marketing⌠(thank goodness!) I can spend days going through hundreds of pages of zoning code, I love researching plats, thrill on compiling data sourced reputably into a great sensible case. Good thing, because I have been doing a lot of that, lately, one for an urban issue, another, rural. Last Week's Birthday In A Gas Crisis Made Sweeter With Sour Cherry Cobbler Crumble  Off-Grid, we always keep stock. (And not just chicken.) I already had two empty cans to fill for generator gas already loaded in the car when the cyberattack gas panic hit. Now, to fill them as usual, Iâd look like one of âthoseâ hoarders... great. *And* we have a week of clouds and rain in the forecast approaching. EVEN OFF-GRID SOLAR HOMES NEED GAS, occasionally, to boost our battery bank back up! I had gas enough for the upcoming weeks, as long as we conserved. Colonial Gas says supply should be resumed at weekâs end, so we decided to not travel, use less, turn off anything unnecessary so solar wouldnât be drained where we might then need to run the generator. Shouldnât we all use less? The gas crisis coincided with a teenâs birthday. She wanted cobbler. Sour Cherry Cobbler Crumble Any Southerner makes cobbler without measuring, it is so easy! (Mix sugar/flour, cream in some butter, stir in milk, taste to see it itâs what you want, then add fruit and bake.) I always add a dash of lemon, and depending on the fruit, sometimes some cinnamon or honey... But this timeâŚÂ We mixed the flour part as ½ coconut flour and ½ regular. The coconut flour not only adds creamy sweetness, but makes it more crumbly. Instead of fresh fruit, we used a jar of SOUR CHERRIES and its juice! We decided there was so much juice, we didnât need milk! And thus it turned out to be a delicious sweet tart cherry cobbler, deliciously moist, yet like a crumble on top! We topped it with coconut milk from the pantry, freshly whipped (to get it more stiff set it in the fridge first).
