Ingredients: 12 mini Oreo cookies. 8 oz 225g cream cheese, softened. 1/2 cup 100g granulated sugar. 1/2 tsp vanilla extract. 1 large egg. 1/4 cup 60ml sour cream. 1/4 cup 60ml heavy cream. 1/4 cup 30g unsweetened cocoa powder. 1/4 cup 45g semisweet chocolate chips.
Instructions: Preheat your oven to 325F 160C and line a muffin tin with 12 cupcake liners. Place one mini Oreo at the bottom of each liner. In a mixing bowl, beat the softened cream cheese until smooth and creamy. Add the granulated sugar and continue to beat until well combined. Mix in the vanilla extract and egg until the batter is smooth. Fold in the sour cream and heavy cream until the mixture is creamy and uniform in texture. Sift in the cocoa powder and gently mix until fully incorporated. Stir in the semisweet chocolate chips to the batter. Pour the cheesecake batter evenly over the mini Oreos in the cupcake liners. Bake in the preheated oven for about 15-18 minutes or until the edges are set but the centers are slightly jiggly. Remove from the oven and let the mini cheesecakes cool to room temperature in the muffin tin. Refrigerate for at least 2 hours or until fully chilled and set. Serve your Mini Oreo Cheesecakes chilled and garnish with extra crushed Oreos or whipped cream if desired. Enjoy!
