Fresh lump crabmeat, creamy mayonnaise, tangy lemon juice, and fragrant herbs seasoned with Old Bay are served between two slices of toasted bread with crisp lettuce and juicy tomatoes.
Ingredients: 1 pound lump crabmeat, picked over. 1/4 cup mayonnaise. 2 tablespoons chopped fresh chives. 2 tablespoons chopped fresh parsley. 1 tablespoon Old Bay seasoning. 1 tablespoon lemon juice. Salt and freshly ground black pepper, to taste. 8 slices bread of choice. 4 lettuce leaves. 1 tomato, thinly sliced.
Instructions: In a large bowl, combine the lump crabmeat, mayonnaise, chives, parsley, Old Bay seasoning, lemon juice, salt, and pepper. Mix well. Toast the bread slices until golden brown. Place a lettuce leaf on four of the toasted bread slices. Divide the crab salad evenly among the four slices with lettuce. Top each with tomato slices. Cover with the remaining toasted bread slices. Slice each sandwich in half and serve immediately.
