Okra Fry Up
If you’ve thought about trying okra but didn’t know where to start, consider a simple fry up with other friendly known vegetables like onions and zucchini. Just trim off the ends, slice into half inch pieces and throw into the fry pan at the end for a quick sizzle. There you have it...a healthy meal in no time with little prep work on your part. Now isn’t that a nice way to make dinner happen...
oil
1 lg. onion, diced
1 c. yellow squash, trimmed, diced
1 c. okra, trimmed, sliced
dash salt/pepper
1 t. garlic, minced
In a large fry pan, add oil and onion. As the onion is beginning to caramelize, add zucchini and okra seasoning with the salt, pepper, and garlic. Fry hot and quickly to serve over cook brown rice. Add in some fresh chopped tomatoes if the mood strikes you. I found the fresh okra at my local Asian grocers but it also resides on the frozen shelves at my local big box grocers as a back up plan.
