Ingredients: 1 cup quinoa, rinsed. 2 cups water. 1 can 15 oz black beans, drained and rinsed. 1 can 15 oz chickpeas, drained and rinsed. 1 cup cherry tomatoes, halved. 1 cucumber, diced. 1/2 red onion, finely chopped. 1/4 cup fresh cilantro, chopped. 1/4 cup feta cheese, crumbled. 1/4 cup extra virgin olive oil. 2 tablespoons red wine vinegar. 1 teaspoon cumin. Salt and pepper to taste.
Instructions: In a medium saucepan, combine quinoa and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until quinoa is cooked and water is absorbed. Fluff with a fork and let it cool. In a large mixing bowl, combine cooked quinoa, black beans, chickpeas, cherry tomatoes, cucumber, red onion, cilantro, and feta cheese. In a small bowl, whisk together olive oil, red wine vinegar, cumin, salt, and pepper. Pour the dressing over the salad and toss to combine. Refrigerate the salad for at least 30 minutes to let the flavors meld. Serve chilled and garnish with additional cilantro and feta if desired.
