Ingredients: 1 cup all-purpose flour. 2 tablespoons sugar. 1 teaspoon baking powder. 1/2 teaspoon baking soda. 1/4 teaspoon salt. 1 cup buttermilk. 1 egg. 2 tablespoons melted butter. 1/2 cup mixed fresh berries e.g., strawberries, blueberries, raspberries. 1/4 cup maple syrup. Non-stick cooking spray.
Instructions: Preheat your brownie pan in the oven to 375F 190C. In a mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt. In another bowl, beat the egg and then add buttermilk and melted butter. Mix well. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; it's okay if there are a few lumps. Spray your brownie pan with non-stick cooking spray to prevent sticking. Pour the pancake batter into each brownie cavity, filling them about halfway. Add a few mixed berries on top of each pancake in the pan. Bake in the preheated oven for about 12-15 minutes or until the pancakes are golden brown and cooked through. While the pancakes are baking, warm the maple syrup in a small saucepan on low heat or in the microwave for about 20 seconds. Once the pancakes are done, remove the brownie pan from the oven and drizzle warm maple syrup over the pancakes.
