Caprese bruschetta with serrano ham.
Tasty, light, that Mediterranean vibe. What's not to love. A super filling lunch or a light dinner. Serves 2. 680 cals per serving.
Step 1- preheat the oven to 200 degrees. Slice the ciabattas in half. Peel and grate the garlic into a bowl and add the olive oil. Mix and drizzle over the cut side of the ciabattas. Set aside for later.
Step 2- halve the tomatoes , slice the avocado in half. Remove the stone. And score along the flesh so you have little squares. Scoop out the squares and set aside. Trim and thinly slice the spring onion.
Step 3- halve peel and thinly slice the red onion. Heat a drizzle of oil in a pan. Once hot, add the red onion. Once soft, add the sugar, water and half the balsamic vinegar . Once caramlized , remove from heat and set aside for later.
Step 4- in another pan, add a drizzle of oil and place on a medium high heat. Slice the ham and add to the pan . Once golden and crispy. Set aside for later. Meanwhile pop the ciabattas in the oven until golden and crispy.
Step 5- mix the olive oil and balsamic vinegar in a bowl. Sprinkle in some pepper and add the tomatoes, avocado, spring onion and rocket . Divide the ciabattas between plates ( 2 per person ) divide the caramelised onion between slices , top with a handful of salad. Then top with tears of mozerella. Crumble on the ham peices and enjoy.
