Entertaining with Missouri Pork & Missouri Wine, 8/2/16
Bacon, Lettuce, & Tomato Bruschetta

8-10 slices of bacon, crispy cooked & crumbled
3-4 roma tomatoes, seeded & chopped (about ā
C)
1 16 oz. package French bread, cut into ¼ā slice

C bleu cheese or feta, crumbled
In a medium bowl, stir together all the topping ingredients; set aside.
Brush olive oil on both sides of bread slices; place them on a baking sheet.
Bake at 400F, turning once, for 7 minutes per side or until crisp and golden brown. Cool
Spoon about 1 T topping on each toast round.
Dry-Rubbed Porterhouse Pork Chops with Steakhouse Butter

6 porterhouse (bone-in loin) chops, about 1ā thick
2 t raw or turbinado sugar
8 T butter, at room temperature
1 T fresh parsley, chopped
¼ C shallots, finely chopped
¼ t Worcestershire sauce
Pinch of dried thyme or ¼ t chopped fresh thyme
At least 2 hours before you grill, make butter: In a medium skillet over medium heat, melt 2 T butter. Add shallots, garlic, and salt, and cook, stirring occasionally, until the shallot is soft. About 3-5 minutes.
Transfer to a bowl and cool for 15 minutes. Add remaining 6 T butter to bowl, along with parsley, lemon juice, white pepper, Worcestershire sauce, and thyme. Use a fork to mash and stir the mixture until well blended.
Arrange a 12ā x 12ā piece of wax paper on work surface. Place butter mixture in center, arranging it into an 8ā long log shape. Use the wax paper to roll the butter up, twisting ends of paper tightly to form an even, round log of butter. Set aside in refrigerator until firm, at least 1 hour. Butter can be made up to 2 days in advance.
To make rub: In a mall bowl combine salt, sugar, chili powder, coriander, garlic, black pepper, and onion.
Sprinkle rub liberally on both sides of chops, and let at least rest 15 minutes. Let the chops come to room temperature before grilling.
Prepare grill to medium-high heat. Grill chops until golden brown and the internal temperature reaches between 145F and 160F degrees. About 4-5 minutes per side.
Remove from grill, and let rest 3 minutes.
Unwrap the butter and cut into 12 slices. Serve each chop with 1 or 2 slice on top.
Salt-Crusted Baked Potatoes

2 T olive oil, good quality
4 T salt (preferably flaked sea salt)
Preheat oven to 425F. Scrub, wash, and dry potatoes.
Wrap in plastic wrap, poke with a fork or knife, and microwave potatoes on high for 4 minutes. (This step can be skipped, if desired. Increase baking time to one hour, if so.)
Remove potatoes from microwave and let cool enough to handle. Pour salt onto a small plate and set aside.
Rub olive oil completely over potatoes. Then roll the potatoes well in salt.
Place them in an oven-safe dish or on a baking tray. Bake for about 40 minutes (or one hour).
Creamed Spinach

1 10 oz. package frozen spinach, chopped
1 3 oz. package cream cheese, softened

t (pinch) ground nutmeg
Cook spinach according to package directions, then drain well.
Stir together cream cheese, butter, and nutmeg. Then stir in the spinach.
Spoon spinach mixture into a lightly greased 1 quart casserole. Sprinkle with Parmesan cheese.
Cover and bake at 350F for 20 minutes. Or cover and microwave at high power for 3 minutes.
Wine & Ice Cream Floats

1 bottle sweet Missouri Wine (fruit wine suggested)
1 C fruit (fresh or frozen)
You can use any glassware youād like as long as it can accommodate 16 oz. or so; mason jars work for a fun presentation.
Scoop approximately ½ C of ice cream (about 2 scoops) into each of the glasses.
Pour 4-6 oz. of wine and 3-4 oz. of club soda into each of the glasses, alternating a couple of times. This helps mix the float without melting the ice cream too quickly.
Top your float with fruit and serve with a straw and a spoon.
