This Paleo-friendly Cuban Mojo Marinated Pork is bursting with citrusy and garlicky flavors. It's the perfect dish for a barbecue or a family gathering.
Ingredients: 3 pounds pork shoulder, cut into chunks. 1 cup fresh orange juice. 1/2 cup fresh lime juice. 1/4 cup olive oil. 8 cloves garlic, minced. 1 teaspoon cumin powder. 1 teaspoon dried oregano. Salt and pepper to taste. 1/2 cup fresh cilantro, chopped.
Instructions: In a large bowl, combine the orange juice, lime juice, olive oil, minced garlic, cumin powder, dried oregano, salt, and pepper. Place the pork shoulder chunks in a zip-top bag or a glass container and pour the marinade over them. Seal the bag or cover the container and refrigerate for at least 4 hours or overnight, turning occasionally to ensure even marination. Preheat your grill to medium-high heat or set up a charcoal grill with hot coals. Remove the pork from the marinade and let any excess marinade drip off. Grill the pork chunks for about 15-20 minutes, turning occasionally, until they are cooked through and have nice grill marks. Remove the grilled pork from the heat and let it rest for a few minutes. Sprinkle the chopped fresh cilantro over the grilled pork as a garnish. Serve the Cuban Mojo Marinated Pork hot, and enjoy!
