An (incomplete) look at NPCs
This is by no means extensive. My resource for female models does not include all Natlan textures and male models are all enemies, so I don't have any Fontanian suits or anything. I also got males and females from different sources, and generally this is just what I know so far.
NPCs are, of course, much simpler than playables. Their models are flat, letting the texture do most of the heavy lifting and allowing for lots of recolors between regions. Male and female models come with three body types each (Standard, Fat, and whatever the third one is called), as well as the Muscleman type. I recently learned that face meshes aren't unique meshes made to fit on the different body types, but Genshin stores them as "shape keys", which change their face to match the body type. Musclemen have their own face meshes and can't share meshes with regular men. Eye colors are also linked to the bodies, not the heads.
Each model has its own mapping layout for the textures, so it's not possible to put a short Mondstadt texture on the big Fontanian dress model. Not even their eye textures are in the same places across textures. For female characters, I classify the clothes models as Slim, Pants, Coat, Shorts, Short Skirt, Medium Skirt 1 (and alt 1 for the Nod Krai variants since they have different arms) and Medium Skirt 2, Long Skirts 1 and 2, and Fontaine. There are also some unique models that I call Miko, Boss, Diver, and Alia. I don't have the same for male models yet.
Faces are interesting, and I assume eyebrows are their own assets that they mix and match onto the faces behind the scenes. Females have five face templates. NPC faces don't move like character faces, so it's possible (actually likely) that the variants on the templates are just the faces they decided to freeze for the NPCs for each variant. You can tell the variant by the eyelashes and eyelid shape. The slight changes in the textures are mostly for brows and lashes. Aside from the fifth column, the eyesockets and mouth are in more or less the same place, across all of them.
Textures for hair and clothes are generally default white, and the alterations for them are made elsewhere in the code. My source for female models had them already colored, but the male models were not. Also, muscle men have their own hair styles. I'm also likely missing male hairstyles.
I find this back end stuff so cool. A fun fact is that accessories like glasses, backpacks, and such are so small, a bunch of them share texture files. However, I'm finding them insufferable to sort so I'm leaving them out for now.
