Yes, if the monster is partly animal based you should consider how its animal bits effect its biology and psychology.
But!
You shouldn't leave the traits that the monster is known for to the wayside. If you focus too much on the animal part and not enough on the monster part, congrats, that's just a furry yer calling by the name of a monster.
And yeah, there's aspects of a monster that ya might wanna leave out either for 'logically it wouldn't apply for X reason in this setting' or Character Y wouldn't do this behavior. Which is fine. Just be mindful of removing or changing so much that yer left with an 'in-name only' furry.

For example, the Minotaur is a cattle-human hybrid that eats meat. In the mythology he comes from his step dad was feeding him humans, specifically 14 people once every 9 years. Using minotaurs as a species for a fantasy setting and remove the meat eating entirely? That's ...just a cow furry. But if we keep the meat eating aspects? Well, we have a meat eating cow furry with more things to play with for worldbuilding purposes and more issues to think about.
You've got potentially, how much meat would something with cow traits need to consume to stay healthy if that's all they can eat? How expensive would that be given their potential size? Would they have to deal with people who think that just because they look like a cow they should be eating what a cow eats and thus have people nagging them about their diet, people putting shit they can't eat in their food, people not believing them about what they eat and refusing to serve them what they actually ordered?
How about using the aspect of the original Minotaur where apparently it's fine with not eating for almost a decade and only gets one truly massive meal every once in a blue moon. What would the finances and culture of a people who only need to eat in once a decade look like? How does this effect how other interact with them, what do minotaur centered events focus on if there's no interest in food? Do they take vacations for their big once a decade meals? Is it a big party? Do minotaurs who live in the same area and get along with each other synch up their meal times and all chip in to pay for the incredibly large amount of food?
Would it be more practical for minotaurs to raise their own meat? Or for a few members of the local community to raise meat for everyone to eat during the once a decade meals? What would their food culture look like if eating isn't an everyday thing? How would it effect their language or media aimed at them? How does having cattle dentation effect how they eat their meat or what cuts they prefer?
Like yeah, you could just do cow furries and call them minotaurs. Orrrrr you could do a lot more by focusing on 'what makes this a monster'.
