These frozen banana halves covered in chocolate are a tasty and guilt-free dessert option. They are like Trader Joe's Gone Bananas but without the nuts. Just what you need to satisfy your sweet tooth on a Minimal Monday!
Ingredients: 4 ripe bananas. 1 cup vegan chocolate chips. 1/4 cup coconut oil. 1/4 cup crushed nuts such as almonds or peanuts.
Instructions: Cut bananas in half across the middle. Put a popsicle stick into the end of each banana half that has been cut off. Lay the bananas out on a baking sheet lined with parchment paper. Freeze for at least an hour. Put chocolate chips and coconut oil in a bowl that can go in the microwave. While stirring every 30 seconds, melt the chocolate in the microwave until it is completely smooth. With the help of a spoon, dip the frozen banana halves into the melted chocolate so that they are covered all over. Before the chocolate sets, sprinkle crushed nuts on top of the bananas that have been covered in chocolate. After coating the bananas, put them back on the tray that has been lined with parchment paper. Freeze for another 30 minutes, or until the chocolate is set.
