We have dragons in Minecraft and I might like to see more mythological creatures from folklore and literature portrayed in blocky form for the Minecraft community to enjoy.
Maybe a Kraken which can drag boats into the briny depths.
Nymphs or nymph-like beings, perhaps with appearances relating to certain flowers or trees by water. Them introducing a willow tree with willow wood, and potentially some more music discs as they will "sing" along if a specific music disc is playing in a music box nearby. Neutral mobs that die if their flower/tree is destroyed, but can be revived by placing their flower somewhere else. If it's a tree, it could function similarly to a creaking's heart. They could present the opportunity to add more flowers, berries, trees, discs, and cool-toned blocks. If you hit one, they can poison you and give you a curse relating to their domain. Maybe the player will take sweet-berry-bush or cactus-like damage whenever stepping over flowers or tall grass for the duration of the curse.
That could also be cool for a mod. I am 100% certain that a mod like that exists.
