Hi~~ I ship them because I like the potential they generate to me. I did mention this in another ask I got, though I guess it's worth expanding on it now that I think it's a very misunderstood ship simply because they didn't directly interact in the original except for minor exchanges.
Still, I do think the scene in the original where Yamato defends Mimi's grief and feelings over Whamon and the other lost Digimon is a tell. Not of romance obviously but of his recognition toward her, which I feel often get patronized a lot even by the others who are genuinely well-meaning. This fandom has a way in which it's easy to box Yamato and say he can't stand Mimi's intensity but I think his personality and the way he's written, he's probably one of the few that do take her feelings seriously and not lesser or 'bratty' or 'spoiled' cleanly. And I do think her juunshin/sincerity of the heart is something actually relieving for him, especially his yuujou/friendship that operates in mostly giving himself through acts of service but the way he does this is very restrained, will not ask or say as much if he can avoid it, but deeply cares for others (even a little too much). There's that scene in Reboot where Mimi's open kindness and tiny but significant display of affection (toward Gabumon, by brushing the dirt off his cheek) which I read as something about her reaching/touching something in him that's usually very guarded, because that scene was preceded by him calling the rest of them as useless or something as a front. But Mimi's is the one to primarily receive him thanking her and apologizing for what he said instead. I don't think you necessarily have to read these as romantic really, but yeah. Because I'm a Yamato fan first, too, well, I just really like the potential of recognition he can get from Mimi, because it seems like it can gently unfurl him, wherein even careful openness can still be costly to him. I guess, I think, with Mimi, the cost of it also reaps back. Friction but productive. Of course, I am gleaning on crumbs and personality match reading of my own, so take that what you will!
Ensemble writing like in Digimon will often have constraints like this I feel, some bonds don't get screentime while others do, which are more production and author choice. All the more where even the little things and details could actually matter. But it doesn't mean it has nothing , especially if all it would take is a writer (because I am one, too!) who would give them even just a bit of space.
