top 5 vegetables?
I feel like I may have answered this one before but it's definitely been a while and perhaps some of my answers have changed. so
arugula. king of leafy greens! truly if a salad's got arugula in it, or a sandwich, or anything, I immediately perk up. other greens are fine but arugula is actually good. big fan.
carrots. roasted or raw. raw carrots have one of the most satisfying crunch mouthfeels there is. roasted carrots are just fucking delicious and can be seasoned with anything. shout out to carrots. real winner of a root vegetable.
bell peppers. this feels like a very basic vegetable but it's good. again, raw, roasted, stir-fried - all good options. very versatile. red is probably my go to but all colors are acceptable.
lotus root. I don't get it a lot but speaking of mouthfeel and also the way it absorbs flavors. still think about this one lotus root salad I had at a ramen place all the time. prime vegetable. need to go to the asian market nearby and pick some up.
butternut squash. I used to think I didn't like squash but I was wrong. you live and you learn.
looked up a list of vegetables because I was feeling like I'd forgotten every vegetable and "garlic" was on there. which I don't feel like counts. but if it does then garlic is every entry on this list except for maybe the one that goes to arugula
also considered putting mushrooms on this list since sometimes people group them in the vegetables category (or at least "produce") but decided to disqualify them by virtue of not being vegetables at all.
