Ingredients: 2 large sweet potatoes, cut into fries. 2 tablespoons olive oil. 1 teaspoon chili powder. 1 teaspoon cumin. 1/2 teaspoon paprika. 1/2 teaspoon garlic powder. 1/2 teaspoon onion powder. 1/4 teaspoon cayenne pepper adjust to taste. Salt and pepper to taste. 1 cup diced tomatoes. 1/2 cup diced red onion. 1/2 cup diced avocado. 1/4 cup chopped fresh cilantro. Juice of 1 lime.
Instructions: Preheat your oven to 425F 220C. In a large bowl, combine the sweet potato fries, olive oil, chili powder, cumin, paprika, garlic powder, onion powder, cayenne pepper, salt, and pepper. Toss until the fries are well coated with the spices and oil. Spread the seasoned sweet potato fries in a single layer on a baking sheet lined with parchment paper or a silicone baking mat. Bake in the preheated oven for 20-25 minutes, flipping the fries halfway through, until they are crispy and golden brown. While the sweet potato fries are baking, prepare the topping. In a separate bowl, combine diced tomatoes, diced red onion, diced avocado, chopped cilantro, and lime juice. Mix well. Once the sweet potato fries are done, remove them from the oven and let them cool for a minute.
