Thumbprint strawberry jam shortbread
Seeing Brad eat those delicious biscuits made me think of my nan's most delicious thumbprint jam shortbread. Midnight is not the time to phone her for the recipe, but my stomach was making the rumblies only these biscuits could satisfy, so I used this recipe.
If you are bored with your classic shortbread recipe, the good news for you is that there are many variations that you can make on the stand
I halved the recipe like this:
70g unsalted butter at room temperature
105g sugar
2.5ml pure vanilla extract
250g cups all-purpose flour
0.6ml salt
30ml of jam
Mix together the butter and sugar until they are just combined. Add the vanilla.
In a medium bowl, sift together the flour and salt, then add them to the butter-and-sugar mixture. Mix on low speed until the dough starts to come together.
Dump onto a surface dusted with flour and bring everything together with your hands.
Roll shortbread into 2.5cm balls and place on a baking sheet. Flatten slightly with your palm.
Make a small indentation in the top of the cookie using your thumb or finger. Spoon about a 1.25ml of jam into the hole. Chill for 30 minutes. (I used strawberry jam likemy nan uses)
Preheat the oven to 175°C. Bake for about 10-12 minutes and golden on the bottom.
Mine were a bit crowded on the pan so they're a bit square... But they taste *almost* like my nan's. Not bad for a midnight snack binge.
