This garlic mashed cauliflower is a tasty, low-carb alternative to mashed potatoes. It is creamy, full of flavor, and works with keto diets. This is a great side dish for any meal.
Ingredients: 1 medium head cauliflower, chopped into florets. 2 cloves garlic, minced. 2 tablespoons butter. 2 tablespoons cream cheese. 1/4 cup grated Parmesan cheese. Salt and pepper to taste. Chopped chives for garnish optional.
Instructions: Place cauliflower florets in a microwave-safe bowl with minced garlic and 2 tablespoons of water. Cover and microwave on high for 6-8 minutes, or until cauliflower is tender. Drain any excess liquid from the bowl. Add butter, cream cheese, and Parmesan cheese to the bowl with the cauliflower. Mash everything together until smooth using a potato masher or immersion blender. Season with salt and pepper to taste. Garnish with chopped chives if desired before serving.
