Enjoy these gluten-free oatmeal creme pies that are just as delicious as the traditional version! The chewy oatmeal cookies sandwich a creamy marshmallow filling, creating a nostalgic treat with a gluten-free twist.
Ingredients: 1 cup gluten-free rolled oats. 1 cup gluten-free all-purpose flour. 1/2 teaspoon baking powder. 1/2 teaspoon baking soda. 1/2 teaspoon ground cinnamon. 1/4 teaspoon salt. 1/2 cup unsalted butter, softened. 1/2 cup brown sugar. 1/4 cup granulated sugar. 1 large egg. 1 teaspoon vanilla extract. 1/2 cup gluten-free rolled oats for filling. 3/4 cup marshmallow fluff. 1/4 cup unsalted butter, softened. 1/2 cup powdered sugar. 1 teaspoon vanilla extract.
Instructions: Set the oven to 350F 175C and heat it up. Put parchment paper on the bottom of a baking sheet. Put 1 cup of rolled oats in a blender or food processor and pulse them until they are very finely ground, like flour. Whisk together baking powder, baking soda, cinnamon, salt, gluten-free all-purpose flour, and oat flour in a bowl. When the butter is soft, add the brown sugar and granulated sugar to another bowl. Cream the mixture together until it is light and fluffy. Add the egg and vanilla extract and mix them in well. Mix the dry ingredients into the wet ingredients one at a time until a dough forms. Add the last 1/2 cup of rolled oats and mix them in. Using a spoon or cookie scoop, place dough balls about 2 inches apart on the baking sheet that has been prepared. Use the back of the spoon or your fingers to make it a little flatter. For 10 to 12 minutes, or until the edges are just beginning to turn golden. Let the cookies cool for a few minutes on the baking sheet before moving them to a wire rack to cool all the way. Make the filling while the cookies cool. Put marshmallow fluff, softened butter, powdered sugar, and vanilla extract in a bowl and mix them together until they are smooth and creamy. As soon as the cookies are cool enough to handle, put some filling on the flat side of one and then put another cookie between them. Do it again with the rest of the cookies and filling. It can be served right away or kept in a container that keeps air out for up to three days.

Enjoy the nostalgic delight of homemade oatmeal cream pies, which feature soft oatmeal cookies surrounded by a luscious marshmallow filling. These treats are ideal for satisfying your sweet tooth.
Ingredients: 1 cup unsalted butter, softened. 1 cup granulated sugar. 1 cup packed brown sugar. 2 large eggs. 1 teaspoon vanilla extract. 1 cups all-purpose flour. 1 teaspoon baking soda. 1 teaspoon ground cinnamon. teaspoon salt. 3 cups old-fashioned oats. 1 batch marshmallow filling see instructions.
Instructions: Warm the oven up to 350F 175C and put parchment paper on baking sheets. Melt the butter and mix it with the white sugar and brown sugar in a large bowl until the mixture is light and fluffy. Adding the eggs one at a time and mixing them in is the next step. Mix the flour, baking soda, cinnamon, and salt together in a different bowl. Slowly add the dry ingredients to the wet ones and mix them together until they are just combined. Add the old-fashioned oats and mix them into the dough until they are evenly spread out. Place spoonfuls of dough on the baking sheets that have been prepared, leaving space between each one so that the dough can spread. Put it in an oven that has already been heated and bake it for 10 to 12 minutes, or until the edges are golden and the middle is still a little soft. After taking the cookies out of the oven, let them cool for a few minutes on the baking sheets before moving them to a wire rack to cool all the way down. You can either make your own marshmallow cream or buy this marshmallow fluff at the store. Once the cookies are completely cool, put a lot of marshmallow filling on the flat side of one and put another cookie on top of it to make a sandwich. Do this again and again until all of the cookies are paired up and turned into oatmeal cream pies.

Delicious banana cupcakes with a surprise marshmallow filling that kids and adults will love. Perfect for birthdays or special occasions!
Ingredients: 1 1/2 cups all-purpose flour. 1/2 cup granulated sugar. 1/2 cup brown sugar, packed. 1 tsp baking soda. 1/2 tsp baking powder. 1/4 tsp salt. 1/2 cup unsalted butter, melted. 2 ripe bananas, mashed. 2 large eggs. 1/2 tsp vanilla extract. 1/2 cup buttermilk. 1 cup mini marshmallows.
Instructions: Warm up the oven to 350F 175C and put paper liners in a cupcake pan. In a bowl, mix the flour, brown sugar, baking soda, baking powder, and salt together with a whisk. Put the mashed bananas, eggs, and vanilla extract in a different bowl. Melt the butter and mix it in well. Mix the wet and dry ingredients together until they are just mixed. After that, mix the buttermilk into the batter until it's smooth. Put half of the batter into each cupcake liner. Put three to four small marshmallows in the middle of each cupcake and gently press them down. A little more batter should be added on top of the marshmallows until the cupcake liners are two thirds full. After the oven is hot, bake the cupcakes for 18 to 20 minutes, or until a toothpick inserted into the middle comes out clean. After taking the cupcakes out of the oven, let them cool in the pan for a few minutes. Then, move them to a wire rack to finish cooling. Once the cupcakes are cool, you can decorate them with frosting or extra marshmallows if you want to.
