I’m trying hard to get to the “Soup” section of this cookbook, and with it being spring break, was able to do the next recipe in this book really soon after the last one. I expected to love it, because I love chipotle, chicken, avocado, etc. And it was good, but… it just felt like it needed something else. It was missing something. I don’t know if I just got the amounts a little off, or didn’t quite add enough salt, or if it just wasn’t my thing. But it was still filling and decent, so I’m not really complaining. Plus I got to use artichoke hearts for the first time! They blended in with everything else for me and didn’t stand out a lot, but it’s still a step for me! (I didn’t even know what artichoke hearts were before this.)

My camera battery also died before I got quite the photo I wanted, and by the time it was charged it was too late. This shot is fine, it just never clicked, and I love it when it clicks.

Very successful first time cooking soba noodles! Not that it’s hard (they were just from dry), but something new is always fun regardless. The recipe itself was actually pretty healthy, and really quite yummy, and I’m thinking now of making a second bigger batch for lunches this coming week.
