BTW huajuan花卷 (flower rolls) are layered and twisted variants derived from mantou. They are rolled up, and various sweet or savory fillings can be added between the layers. The traditional flavor is salty with scallion aroma. Some people prefer flavorful huajuan, while others favor the pure grain aroma and simple texture of plain mantou.

Not sure if it is because Singapore is going to celebrate its 60th birthday next month but many of the fast food chains had come out with their own version of the chilli crab burger. 🦀 We have KFC, Long John Silver's, McDonald’s and MOS Burger sporting Singapore’s signature and iconic dish in burger forms. Today I will be reviewing KFC’s Chilli Crab Mantou Zinger. 🍔
Bought the Chilli Crab Mantou Zinger Meal (S$9.80) which comes with fries 🍟 and a Sjora Mango Peach 🥭🍑 drink. Unlike the competitors, KFC chose to sandwich their crispy Zinger fillet between a golden clamshell mantou (馒头) and a generous drizzle of tangy, spicy chilli crab 🦀 sauce. The deep-fried mantou is fluffy with a sweetness to it. What I like about KFC’s version is the thicker and crisper chicken fillet which offer better texture and the chilli crab sauce better balanced, more toward the spicy side.

Longevity Peach Buns
Pillow soft Chinese steamed buns, known as mantou, are a versatile and delicious staple in Chinese cuisine. They can be enjoyed plain or filled with various sweet or savory fillings. This recipe yields perfectly fluffy and tender mantou that you can savor as a snack or accompaniment to your favorite dishes.
Ingredients: 2 cups all-purpose flour. 1 tablespoon sugar. 1 teaspoon active dry yeast. 1/2 cup warm water. 1 tablespoon vegetable oil. Pinch of salt.
Instructions: In a bowl, combine the warm water and sugar. Sprinkle the yeast over the mixture and let it sit for about 10 minutes until it becomes frothy. In a large mixing bowl, add the flour and a pinch of salt. Make a well in the center and pour in the yeast mixture. Mix until a dough forms. Knead the dough on a lightly floured surface for about 5-7 minutes until it becomes smooth and elastic. Place the dough in a greased bowl, cover it with a damp cloth, and let it rest in a warm place for 1 hour or until it has doubled in size. Punch down the dough to remove air bubbles and knead it for another 2 minutes. Divide the dough into small, equal-sized pieces and roll them into balls. Flatten each ball into a disc shape with a rolling pin, leaving the center thicker than the edges. Brush one side with vegetable oil. Fold the discs in half to create a semi-circle shape, pressing the edges to seal. Place them on square pieces of parchment paper. Arrange the prepared mantou on a steamer tray, leaving some space between them to expand. Cover with a damp cloth and let them rest for another 15 minutes. Steam the mantou over boiling water for 15-20 minutes until they become puffy and cooked through. Remove the steamed buns from the steamer and let them cool slightly before serving.
