Ingredients: 4 Mahi Mahi fillets. 2 tablespoons olive oil. 1 onion, finely chopped. 2 cloves garlic, minced. 1 bell pepper, diced. 1 can 14.5 oz diced tomatoes. 1 tablespoon tomato paste. 1 teaspoon paprika. 1 teaspoon dried thyme. 1/2 teaspoon cayenne pepper. Salt and pepper to taste. Fresh parsley for garnish.
Instructions: Add salt and pepper to the Mahi Mahi fillets. Warm up a big pan with olive oil over medium-low heat. Chop up the onion, garlic, and bell pepper and add them to the pan. For about 5 minutes, or until softened, saut. Tomato paste, paprika, thyme, and cayenne pepper should all be mixed in now. Stir it every now and then for 10 minutes. Put some olive oil in a different pan and heat it over medium-high heat. Season the Mahi Mahi fillets and add them to the pan. Cook for three to four minutes on each side, until they are golden brown and fully cooked. In a pan, cook the Mahi Mahi fish. Put it on a plate and pour the Creole sauce over it. Before serving, sprinkle with fresh parsley.
