Matha Puli – An Ancient Bhoga of Shri Jagannath

Matha Puli is one of the Pracheen Bhogas (ancient sacred offerings) traditionally offered to Lord Jagannath in the sacred kitchen of Shri Jagannath Temple, Puri. This unique preparation is known by different names according to its size and shape.

The traditional varieties include:

- Matha Puli – a thin, large, round-shaped puli.

- Chanda Matha Puli – a small, round-shaped puli.

- Gola Pata – a thick, round-shaped puli.

- Jenamani Pata – a traditional variation with its own distinctive form.

- Kanar Puli – a very large, thin, round-shaped puli.

Different varieties are offered during the temple's daily rituals:

- During Sakala Dhupa, 6 Matha Pulis are offered.

- During Madhyahna Dhupa, 70 Matha Pulis and 21 Gola Patas are offered.

- During Sandhya Dhupa, 22 Matha Pulis and 3 Kanar Pulis are offered.

According to tradition, during the reign of a certain king, a grand offering ritual was performed near the Ratna Singhasana (the sacred throne of Lord Jagannath). A large pond-like structure was created and surrounded with Kakara Pitha (a traditional sweet) forming a boundary.

Huge pots filled with kheer (sweet milk pudding) were continuously poured into this enclosure, symbolizing an “ocean of milk.” This massive offering was then dedicated to Lord Jagannath.

To prepare such an enormous quantity of food, many temple cooks (called Suara) from different families like Samantaray, Sahu, Mohanty, and Dixit, along with Brahmins, were appointed.

Kadali Bara (Modified Recipe)

Mahaprasad is the sacred food offered to Lord Jagannath in the Jagannath Temple in Puri, Odisha. Kadali Bara is an important offering during Bada Simhara Bhoga ( time Sayan Dhupa ) , the final offering of the day, symbolizing devotion and purity. The following recipe is a modified version of the traditional Kadali Bara, using personalized ingredients and measurements.

Ingredients:

2 raw bananas (boiled and mashed)

1 medium-sized sweet potato (boiled and mashed)

3 cm ginger (crushed)

1 tablespoon crushed golmarch (black pepper) (coarsely crushed, not finely ground)

1 tablespoon cumin seeds (jeera) (lightly dry-fried and coarsely crushed, with some reserved for garnish)

100 grams wheat atta (for binding)

Salt (to taste)

Ghee (for frying)

Green chili (crushed) (optional, as per your personal preference)

Preparation:

Boil and mash the raw bananas and sweet potato together until smooth.

Lightly dry-fry the jeera (cumin seeds) in a pan on low heat until aromatic. Crush it coarsely and set aside some for garnishing.

In a large mixing bowl, combine the mashed raw banana and sweet potato with crushed ginger, crushed golmarch, coarsely crushed jeera, and salt. Add 100 grams of wheat atta to bind the mixture and knead until you achieve a smooth, dough-like consistency.

Shape the dough into small, round, flat patties (bara).

Heat ghee in a flat pan or tawa. Once hot, place the patties on the pan and pan-fry them on medium heat until both sides are golden brown and crisp.

Garnish the fried patties with the reserved crushed jeera for an aromatic finish.

Serving:

These Kadali Baras are traditionally offered as part of the Bada Simhara Bhoga, the last offering to Lord Jagannath.

They can also be enjoyed as a delicious snack or a side dish.

The ancient food culture of the Jagannath Temple, dating back to the 12th century AD or possibly even earlier, is a remarkable tradition that showcases a blend of spirituality, community, and culinary mastery. The temple's kitchen, often referred to as one of the largest in the world, serves a daily assortment of 56 varieties of food, known as the Chappan Bhog, which is offered to Lord Jagannath.
