If each of us has our own universe, created by our assumptions, then why are we still in the same world as those who don't believe and deny? Why can't science still prove such things in our world?
I think you've confused yourself and me.

This idea would only become confusing if someone were mixing individual consciousness and collective consciousness. Those are two different frameworks.
With individual assumptions, people are not experiencing the exact same reality in terms of perception, beliefs, circumstances, and interpretations.
If you are experiencing the world through your own assumptions, that also means everyone else is experiencing the world through their own assumptions.
You are essentially saying that someone who does not share the same assumptions as you cannot exist within the same reality, but that does not follow from the idea of individual perception.
A billionaire's experience of reality is drastically different from someone who has never seen a million in their lifetime.
They exist in the same world, but their experiences and perceptions of it are completely different.
And using the same logic, wouldn't deniers also be able to assume all believers away?
The reasoning would apply both ways.
As for why science cannot prove it, I don't exactly know what you mean by that. Prove what?
