A creamy and tangy vegan dessert with the refreshing flavor of key limes.
Ingredients: 1 cup raw cashews. 1/2 cup coconut cream. 1/4 cup lime juice. 2 tablespoons lime zest. 1/4 cup maple syrup. 1/4 cup coconut oil, melted. 1 teaspoon vanilla extract. Pinch of salt.
Instructions: Soak cashews in water for at least 4 hours or overnight. Drain and rinse cashews. In a blender, combine soaked cashews, coconut cream, lime juice, lime zest, maple syrup, melted coconut oil, vanilla extract, and a pinch of salt. Blend until smooth and creamy, scraping down the sides as needed. Pour mixture into individual serving cups. Chill in the refrigerator for at least 2 hours, or until set. Garnish with additional lime zest before serving.
