Ingredients: 4 chicken thighs, bone in, skin on. 1 cup long grain rice. 1 1/2 cups chicken broth. 1/3 cup lemon juice. 1/2 cup water. 1 tbsp olive oil. 4 cloves garlic, minced. 1 onion, finely chopped. 1 tsp dried oregano. 1 lemon, sliced. Salt and pepper to taste. Fresh parsley, chopped for garnish.
Instructions: In a bowl, mix chicken broth, lemon juice, and water. Place rice in the slow cooker, spread evenly. Place chicken on top of rice. Drizzle olive oil over chicken. Sprinkle minced garlic, chopped onion, and dried oregano over chicken. Season with salt and pepper. Pour broth mixture over chicken and rice. Place lemon slices on top. Cover and cook on low for 4 hours, or until chicken is tender and rice is cooked. Garnish with fresh parsley before serving.
