Ingredients: 1 tablespoon olive oil 1 pound sea scallops, patted dry ½ teaspoon salt ¼ teaspoon black pepper 3 tablespoons butter 2 teaspoons garlic, minced 1 medium lemon (juice from half, other half sliced) 1 tablespoon fresh parsley, chopped Instructions: Prepare Scallops: Season both sides of the scallops with salt and pepper. Pat them dry with paper towels to ensure they sear nicely. Sear Scallops: In a large cast-iron or stainless-steel skillet, heat the olive oil over medium-high heat. Place the scallops in the skillet and cook for 23 minutes on each side until they are golden-brown and just cooked through. Remove scallops from the skillet and set aside.
