Ingredients: 1 cup almond flour. 1/4 cup unsalted butter, softened. 1/4 cup granulated sugar substitute e.g., erythritol or stevia. 1 egg. Zest of 1 lemon. 1 tablespoon lemon juice. 1/2 teaspoon vanilla extract. 1/4 teaspoon baking soda. 1/8 teaspoon salt.
Instructions: Warm the oven up to 350F 175C and put parchment paper on a baking sheet. Melt the butter and mix it with the sugar substitute in a bowl until the mixture is smooth. Put the egg, lemon juice, lemon zest, and vanilla extract in the bowl. Combine well. Add the almond flour, baking soda, and salt to a different bowl and mix them together using a whisk. Slowly add the dry ingredients to the wet ones while mixing them together. Do this until a dough forms. Make small balls out of the dough with your hands and put them on the baking sheet that has been prepared. Press down gently on each ball of dough to make it flat like a cookie. After the oven is hot, bake the cookies for 10 to 12 minutes, or until the edges are golden brown. After taking the cookies out of the oven, let them cool for a few minutes on the baking sheet before moving them to a wire rack to cool all the way.
